When cooking, sometimes less is more! Try out this savoury yet simple recipe for this fiery chicken that uses a unique baking method to keep the chicken moist and juicy. 1 1/2 tablespoon paprika
1 tablespoon cayenne powder
2 teaspoon cumin/Geera (1pack)
1 tablespoon garlic powder
1 tablespoon black pepper
2 tablespoons Salt
2 tablespoons Brown sugar
1 pound of chicken (ideally thighs, drumsticks and wings)
Directions
Combine all dry spices, salt and black pepper into a small bowl to create a spice rub for chicken.
Massage the spice rub into the chicken. Ensure that each piece of chicken is evenly coated with the spices. The chicken should have a red colour from the paprika and cayenne.
Place chicken in the refrigerator and allow to marinate for 1 hour.
Preheat oven to 375
To bake the chicken, take a deep baking tray and fill the tray with ½ inch of water. The addition of the water will create steam during the baking process, helping the chicken retain moist texture. The water results in a delicious gravy to be served with your meal.
Remove chicken from refrigerator and place each piece in the baking tray.
Place chicken in oven and leave for 1/2 hour. Return to oven and flip the chicken and allow to bake on the other side. Allow baking in the oven for another 1/2 hour.
Remove from oven and serve with fried rice and potato salad!
