FLOURLESS BLACK BEAN BROWNIES
For many of us playing mas, it’s gym and diet season. Amidst the humdrum of the grilled chicken and veggies, I do catch a craving for a sweet bite. Flourless brownies offer a lighter alternative to the classic brownie with barely any difference. I use black beans and chocolate chips for a super moist and fudgy texture. It's not only chocolaty and rich but, also packed with extra protein!
INGREDIENTS
1 15-ounce can of black beans
3 eggs*
2 teaspoons vanilla extract
½ cup brown sugar or honey
1 teaspoon baking powder
½ teaspoon salt
½ cup cocoa powder
3 tablespoons coconut or vegetable oil or melted butter
¼ cup chocolate chips
*For egg substitution, mix 3 tablespoons chia seeds with 9 tablespoons water; allow to sit for 20 minutes before using.
DIRECTIONS
1 Preheat oven to 350°F. Line a 9-inch by 9-inch baking pan with foil and grease with non-stick spray.
2 In a food processor or blender, add black beans and 1 egg; blend until completely smooth. Add remaining eggs to black beans and blend until smooth.
3 Add brown sugar, baking powder, salt, cocoa powder and oil to the blender; blend until homogenous.
4 Pour batter into prepared baking pan and top with chocolate chips.
5 Bake for 35 minutes.
6 Cool before cutting into squares.
