Quick-fix dinners

It seems with every passing year our lifestyles are accelerating at a faster pace. If you are a working mom then you are balancing home and career at the same time, not an easy task. Especially if you are faced with the daily ritual of preparing dinner. But cooking a home made meal every day with all fresh ingredients is really not a daunting task. All you need is a little planning ahead and you can have dinner in a snap.  Portion freeze your meats and fish on the weekend, buy enough vegetables to allow you one fresh each day. If you can pre clean these then you'll save more time during the week. Peel your garlic and store in a glass container in the fridge. You can even peel onions and store them in your fridge. Always have salad ingredients on hand and keep quick cooking provisions on hand at all times, like plantains, eddoes and cassava, (this you can peel and freeze). Here are some quick fix recipes to get you started!
 
 
CHILI CUMIN STEAK SAUTE
 
1 tbs chili powder
1 tsp ground cumin
1 tsp minced garlic
2 tbs olive oil
1 tbs red wine vinegar
1/2 tsp brown sugar
2 tbs fresh Portuguese thyme, chopped (oregano)
1 1/2 lbs sirloin steak, cut into strips
2 tbs olive oil
1 large onion, julienne
1 small bell pepper. julienne
2 cloves garlic, chopped
salt
 
Combine the first seven ingredients, rub onto steak strips. Marinate for 60 minutes.
Heat olive oil in a sauté or frying pan; add peppers, onion and garlic.
Cook for a few minutes, until peppers turn bright green add steak and fast fry turning all the time.
After about four minutes remove from heat and season to taste with salt. Combine.
 Serves four

APPLE FRITTERS

4 apples, cores removed and sliced into 1/2 inch thick slices.
 
Batter:
1 cup all purpose flour
1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
2 eggs, separated
1 tbs brown sugar
3/4 cup milk
1 tbs vegetable oil or melted butter
 
Beat egg whites to soft peaks, set aside.
Combine dry ingredients, beat egg yolks with milk and oil.
Add to dry ingredients, beat until smooth.
Let stand for 20 minutes.
Then fold in egg whites.
Heat oil in wok or deep fryer.
Dip apples into batter and fry on both sides until golden.
Remove and drain.
Sprinkle with additional sugar if desired. Serve immediately.

ISLAND CORN BREAD

 
1 1/2 cups all-purpose flour
1 1/2 cups cornmeal
1 sugar
1 tsp salt
1 tbsp. baking powder
1/2 tsp. baking soda
2 eggs
1 1/4 cups milk combined with one tbs lime juice
2 tbs. vegetable oil
 
Preheat oven to 375F.
In a large bowl combine cornmeal, flour, sugar, baking powder, baking soda and salt.
In a separate bowl beat eggs, add milk and oil. Stir wet ingredients into dry ingredients.
Spoon into well greased baking pan.
Bake for 40 minutes until done and is springy to the touch.
Cool for ten minutes before cutting.
 Serves eight
