5-Ingredient Healthy Chocolate Pudding

Naaz Khan, own­er of Mai­son Culi­naire, is a pro at cre­at­ing recipes free from processed in­gre­di­ents, dairy, re­fined sug­ars and gluten. In her episode of Com­mu­ni­ty Kitchen, she showed Lur­bz how to make a ve­g­an, dairy-free, sug­ar-free choco­late mousse us­ing Nat­u­ral­ly Al­mond‘s al­mond milk.

It takes less than five min­utes to whip up this choco­late pud­ding with sim­ple in­gre­di­ents from your pantry and fridge. Trust us, you’ll be blown away when you re­al­ize some­thing this choco­late-y and sweet has no added sug­ars. All of its sweet­ness comes from the cashew nuts. The best part is you can’t taste a dif­fer­ence at all!

This healthy choco­late pud­ding recipe is very ver­sa­tile. You can play around with it by us­ing dif­fer­ent nuts to find your favourite taste and tex­ture (but re­mem­ber to soak them!). Or, you can switch things around by adding a few drops of pep­per­mint ex­tract, maple ex­tract, or even co­conut ex­tract along with the vanil­la. For a nut-free ver­sion, try oat or soy milk in­stead.

In­gre­di­ents

1 cup choco­late

1 cup cashews, soaked for at least 4 hours

3/4 cup al­mond milk

1 tea­spoon cof­fee

1 tea­spoon vanil­la ex­tract

Di­rec­tions

Place the choco­late chips in a heat-safe bowl and mi­crowave in 30-sec­ond in­ter­vals, stir­ring in be­tween to make sure the choco­late doesn’t burn.

Com­bine all in­gre­di­ents in a blender and process un­til smooth.

Pour in­to small bowls or ramekins and cool in the fridge for at least 2 hours un­til it thick­ens.

Eat when­ev­er you feel like it. It keeps in the fridge for four days, but it’ll dis­ap­pear way be­fore then.
